Rocky Road Bars Recipe

I admit, I don’t really have a recipe for today…. and I am so too tired to write one, BUT I will tell you that I tested tone Sunday afternoon, cuz it just so happened I had all the ingredients on hand and was in major need of a sugar rush.  I am going to be in trouble after I have this baby and make myself be accountable for what I eat.  Lately I have just let my whims carry me… (not a good idea!)

Because when you see something like this and when you see the ingredients you will know why…

Thank heaven I printed it out- well my thighs are not thanking heaven for it, actually!

2 cups Graham Crackers Crumbs
3/4 cup butter, melted
1 1/2 cup shredded coconut
1 1/2 cup walnuts, chopped
1 300 gram package of Semi sweet chocolate chips
1 1/2 cups of mini Marshmallows
1 300 ml can of sweetened condensed milk
3 – 4 squares of semi sweet bakers chocolate melted (optional)

Preheat over to 350.

Mix the crumbs and the butter together.  Press into a 9″ x 13″ greased pan.

Sprinkle in layers with coconut, then nuts, chocolate chips and finally marshmallows.
Drizzle the condensed milk all over the top of the marshmallows.

Bake it for 30 minutes.

If desired, melt the baker’s chocolate 2 or 3 minutes and drizzle over the bars.

Try not to eat them all in one sitting, you’ll regret it…. maybe!

Oh and they are so easy to make, the kids can totally get involved, if not make it all themselves

  1. Oh. My. Goodness. I just made these (with some adjustments – no nuts, but lots more coconut, chocolate chips and marshmallows), and they are SO GOOOOD!!!!!! Thanks for sharing the recipe!
