I’ve been making them since September and there is everything to love and only one thing to hate (they don’t fill you up, so you can eat them in record numbers- beware).  Since it is almost the valentine season, I figured it was time for some lovey-dovey desserts… Don’t you think?  Well these pink little pillows are easy to make, delicious to eat and perfectly valentine pink!

  1. How long would you estimate for the egg whites to get to stiff peaks? I have just your standard kitchen aid stand mixer?

    1. Katie, i do have a stand mixer, it only takes about 2 minutes with that. I have made meringues with beaters, it may take a minute or two more. And IT is okay if it isn’t super stiff, the cookie is just more dense in the end, which I don’t mind!
