There’s nothing better than homemade granola! It’s quick to make, it’s delicious and it’s cheaper than getting it from the store. 

I usually have my go-to recipe but lately, I’ve been playing with flavors, textures, spices and roasting levels. Basically, I’ve been all day playing with granola.

That’s how I discovered this fall harvest granola which is, simply put, the best granola you’ll ever have. Period.

  • It’s really packed with flavor. You know how some granola recipes are bland and boring? Well, this is not it, this recipe is loaded with spices but not in an overpowering way. Just the perfect hint to be warm and comforting. It also has a subtle apple flavor thanks to the addition of apple cider.
  • It’s sweetened with maple syrup, so you get some of the delicious maple flavor and the perfect amount of sweetness healthily. Which takes me to the next point.
  • This fall harvest chunky granola is actually good for you! I mean, it’s packed with healthy fats thanks to the nuts. Fiber, thanks to the whole oats, and it’s made without processed ingredients. Your body will thank you.
  • And finally, this is chunky, and crispy, and crunchy, and all the things the best granola recipe should be.

Like so easy it’s almost a joke to include a recipe. 

Just mix everything in a bowl and take to the oven. Toss it around a couple of time while it’s baking to make sure every single part gets golden brown and crunchy and you are all set.

If you want to have a lot of clusters let it cool completely before taking it out of the baking pan.

Letting it cool will allow the sugars to crystallize. When the sugars crystallize and set you end up with a block of granola that can be broken into pieces and clusters.

How to store homemade granola

And best of all? This will last for a long time stored in an airtight container. So make a big batch and have enough to last you for several breakfasts. That is if you can stop yourself from eating it all in one sitting.

Fall Harvest Chunky Granola

This Fall Harvest Chunky Granola is the best granola you’ll have this season! It’s packed with spices but in a non-overpowering way. It has a good mix of healthy nuts and seeds, and just the perfect dose of sweetness thanks to the maple syrup.

Fall Harvest Chunky Granola

Ingredients

  • 3 cups rolled oats
  • 1 cup chopped walnuts
  • 1/2 cup pepitas
  • 3/4 cup dried cranberries
  • 1/2 cup peanuts
  • 1 tsp vanilla
  • 1/3 cup coconut oil
  • 1/2 cup maple syrup
  • 1/4 cup apple cider optional
  • 2 tsp pumpkin spice

Instructions

  • Preheat oven to 300 degrees.
  • In a bowl combine oats, chopped walnuts, pepitas, dried cranberries and peanuts. Mix in the pumpkin spice and set aside.
  • In a sauce pan over medium heat mix coconut oil, maple syrup and vanilla. Add apple cider, if using, and bring to a soft boil. Let it boil for around 2 minutes.
  • Remove from heat and pour over the bowl of oats. Mix until everything is coated in maple sugar.
  • Spread the granola in a baking tray and take to the oven. Bake for 20 minutes. Remove from oven and toss and turn. Return to the oven and bake fro 20 more minutes. Repeat the process 2 more times or until the granola is golden brown.
  • Let it cool completely before storing in an airtight container.
